4 A Control panel Y our oven’ s control panel consists of touch keys and a display . Use the control panel to control all the oven’ s features (sometimes called modes). B Air intake/Exhaust slots The oven dr aws air in through the intake slots to cool its internal parts.

6 Getting to Know Y our Oven A START/CONTINUE key When you use the v arious features (or modes) on your oven, select the cook - ing mode rst, then touch the START key . Also, use the START k ey to start the timers. B Cooking mode keypad Select the type of cooking you w ant to perform by touching one of the cooking mode keys.

8 Control Panel Settings Setting the Clock 1. T ouch the CLOCK key . The colon between the minutes and seconds on the time display will begin to ash. 2. Enter the current time on the number keypad before the colon stops ashing. F or example: For 12:08, touch 1-2-0-8 on the keypad.
9 T o inser t your GlideRack oven rack... Y our oven comes with a Dacor GlideRack o ven rack. Y ou can pull the GlideRack o ven rack out further than the standard racks and still support hea vy pots and pans full of food. It is great for heavier foods and the optional Dacor baking stone.
10 Operating Y our Oven Star ting Y our Oven 1. Adjust the racks to the appropriate lev el. 2. Determine the best cooking mode for the type of food to be cooked. Select from the following... • CONVECTION BAKE - A combination of the convection fan and a bottom heat source.
11 Operating Y our Oven Lock-Out Feature If you want to disable the keys on the control panel when the oven is not in use: • Push and hold the CANCEL · SECURE key for about three seconds. The control panel keys will stop work - ing and “ OFF “ will appear on the display .
12 Common Problems When Using the Bake Mode Problem May be caused by What to do Cookies burn on the bottom. Oven door opened too often. Set timer to shortest recommended cooking time and check food when timer beeps. Use door window to check food. Incorrect rack position used.
13 Operating Y our Oven Y our oven offers three convection cooking modes... • Pure Convection • Convection bake • Convection roast As a general rule, in the con vection modes time is about 25% shorter . Set the timer 15 minutes before the shortest stated time and add more time if necessary .
14 Operating Y our Oven Convection Roast Y our oven’ s Convection roast mode uses a combination of the convection fan and heat sources abo ve and below the food. It is best for rib roasts, turkeys, chick ens, etc. Roasting T ips All baking modes can be used to roast in your ov en.
15 Operating Y our Oven T imers w arning The timers on your oven do not turn the oven on or off. They are only for timing purposes. When you want to turn the oven off automatically , use the Delay Timed Cooking Features . note T ouching the CANCEL · SECURE key does NOT reset or stop the timers.
16 Operating Y our Oven About the 3 Delay T imed Settings The delay timed cooking keys are: • START TIME : The time the oven starts cooking • COOK TIME : The amount of time the oven cooks before it goes into hold mode. • STOP TIME : The clock time the oven turns off and goes into hold mode.
17 Operating Y our Oven Using the Meat Probe When you cook foods like roasts and poultry , the internal temperature is the best w ay to tell when the food is prop- erly cooked. Y our oven’ s meat probe is an easy way to take the guesswork out of roasting.
18 Operating Y our Oven Using the Meat Probe (Continued) Impor tant details about the meat probe: • Y ou must select the specic cooking mode ( BAKE , CONV BAKE , PURE CONV or CONV ROAST ) before you touch the PROBE k e y. • When using the meat probe feature the preheat cycle is disabled.
19 Operating Y our Oven When you dehydrate... 1. W ash and remove ex cess moisture from all fruits and vegetables before dehy drating. 2. Cut fruits and vegetables into uniform pieces. 3. Y ou can add honey , spices, lime juice, or orange juice to give the fruit a different av or .
20 Operating Y our Oven Proofing Y ou can use your oven to proof y easted doughs at a low and draft -free temperature using the Bak e mode. 1. T ouch the BAKE key*. 2. Enter the temperature of 100°F on the k eypad. 3. T ouch START . 4. Place the dough in a greased bowl inside of the oven.
21 Operating Y our Oven Adjusting the Oven T emperature Even though your o ven is adjusted at the factory to cook at the temperature shown on the displa y , it may cook faster or slower than your old ov en. w arning Do not adjust the probe or self-clean offset temperatures.
22 The Best Use of Bake W are • Y ou should bake cakes, quick breads, mufns, and cookies in shiny , reective pans for light, golden crusts. A void old, darkened, warped, dented, stainless steel and tin-coated pans. They heat unevenly and will not give good baking results.

24 Cooking T ips High Altitude Cooking Due to the lower atmospheric pressure at higher altitudes, foods tend to take longer to cook. Therefore, recipe adjustments should be made in some cases.
25 w arning • Clean only the parts of the oven listed in this manual. Clean them only in the manner specified. • T o avoid dangerous fumes or damage to your oven’s surfaces and accessories, use only the types of cleaning solutions specified in this manual.
26 Care and Cleaning Self-clean (Cont.) If you want to stop the self -clean cycle, touch the CANCEL · SECURE key . K eep in mind that the oven door will remain locked until it is safe enough to open. The lock symbol will disappear from the display when the door lock is released.
27 Cleaning the Interior Convection Filter w arning For your safety and proper oven performance, re-install the filter before using the oven to cook. If you don’t, the spinning fan blades at the back of the oven will be exposed. The convection lter is located in the back of each o ven chamber .
28 Cleaning the Interior (cont.) Door Gasket (Seal) w arning T ake extreme caution when cleaning the door gask et. Rubbing or displacing it may damage the tight door seal required for proper cooking and self -cleaning. Clean the door gasket by dabbing it with a solution of water and mild soap.
29 w arning • T o prevent electrical shock and/or personal injury , make certain that the oven and light bulb(s) are cool and that power to the oven has been turned off at the main power supply before replacing the light bulb(s). • Always make sure the lens covers are in place when using the oven(s).
