i W ARRANTY ST A TEMENT Frymaster , L.L.C. makes the following limited warranties to the original purchaser only for this equipment and replacement parts: A. WARRANTY PROV ISIONS - FRYERS 1. Frymaster L.L.C. warrants all components against defects in material and wo rkmanship for a period of one year.
ii E. PARTS RETURN All defective in-warranty parts must be re turned to a Frymaster Author ized Factory Service Center within 60 day s for credit. After 60 days, no cr edit will be allowed.
1-1 CHAPTER 1: INTRODUCTIO N 1.1 General Read the instru ctions in this manual thoroughly be fore attempting to opera te this equipment. This manual covers all configurations of models MH14 and BIMH14 fryers built since September, 2001. Models desig nated MH14 do not have built-in filtration sy stems.
1-2 1.3 Computer Information This equipment has been tested and found to compl y with the limits for a Class A dig ital device, pursuant to Part 15 of the FCC rules. While this device is a verified Class A device, it has be en shown to meet the Cla ss B limits.
1-3 1.5 Service Information McDonald’s store personnel p erform routine maintenance. F or non-routine m aintenance or repairs, or for service information, contact your local Frymaster Authorized Service Center (FASC). Service information may also be obtained b y calling the Frymaster Technica l Services Department ( 1-800- 24FRYER).
2–1 CHAPTER 2: INST A L LA TION INSTRUCTI ONS 2.1 General Proper install ation is essen tial for th e safe, effici ent, trou ble-free operation of this appliance.
2–2 2.2 After Fr y er s Are Under The Fry Station Hood Adjust casters so that fryers are level and at the proper h eight in the fry station hood. If necessar y, level the fryer(s) b y loose ning the locking screw on the caste r leg and screwing the caster in or out.
2–3 2.4 Fryp ot Boil-Ou t Before the fryer is first used for cooking product, it should be boiled out to ensure that an y residue from the ma nufacturing process has bee n completely elimina ted. Also, after the fr yer has bee n in use for a period of time, a har d film of caramelized vege table oil will form on the inside of the fr ypot.

4-2 4.1 STEP-BY -STEP FIL TR A TI ON INSTRUCTIONS Switch compu ter to OFF. Slide the filter pan from the fryer cabi net. Open the filter- cover, and rem ove and clean the crumb tray . Note: The fryer must be at operating temperature prior t o filtering.
4-3 INCORRECT CORRECT The filter pad is place d in the pa n with the heavil y textur ed side facing up. W hen filter paper i s used, one s heet is plac ed over the screen and 8-ounces of filter powder is spread ev enly on th e top of th e paper. WARNING: Do Not Use Filter Powder on Filter Pads Place p ad evenly on filter scr een.
4-4 Drain Valve Handle Oil-Return Handle Use 8- ounces of filter powder and spread i t evenly over filter paper. R ememb er, DO NOT USE filter p owder on fil ter pads. Replace cru mb screen inside the filter p an. It's imperative tha t the crumb screen is installed prior to filtering, f or optimum f ilter- system per formance.
4-5 W hen fryp ot emp ties in to f ilte r pan, turn return handl e to ON. Filter pump will activate. The oil moves throug h the filter , the frypot and out the open fry pot-drai n during filteri ng. Allow the oil to circul ate throug h the pot for 5 minutes.
4-6 W hen the filter p an em pties, bubble s will form in the frypot. All ow bubbli ng to contin ue 15-20 s econds t o ensure the oil return l ines are clear of residual oi l. Turn off filter p ump. Top up oil level. Some oil may be lost in filtering pr ocess.
4-7 The oil may drop bel ow operating temperat ure during the filtering process. In that case, the fryer will display Low- Temp and h eat the oil when t he comput er is turned back on. Return fryer to operatio n, or filter anot her frypot in the battery.
4-8 WARNING DO NOT hammer on the drain v alve with the Fryer’s Friend. This will damage the drain valv e ball and prevent th e valve from sealing se curely , resulting in a leaky val ve . 4. After draining the oil/shortening, clean all food particles and residual oil/shortening from the frypot.
4-9 NOTE: To drain old oil or boil-out solution, drain in an appropriate container. DO NOT DRAIN WATER IN THE F ILTER PAN. WARNING The filter pan MUST MUST MUST MUST never be us ed to dispose of, or transport spent-cooking oil to the disposal area.
5-1 CHAPTER 5: PREVENTIVE M A INTENANCE AND TROUBLESHOOTING 5.1 Preventive Maintenance Preventive Maintenan ce (PM) procedures a re contain ed in McDonald’s P reventive M aintenance System Maintenance Requirement Cards (MRC) 12, 14, 14A, and 15. The ca rds are distributed with this manual, but are not an integral part of the manual.
5-2 • Inspect the filter pan for leaks and c leanliness. If there is a larg e accumulation of crumbs in the crumb basket, advise the owner/operator that the crumb b asket should be emptied into a fireproof container and cl eaned dail y.
