1-1 CHAPTER 1: INTRODUCTIO N 1.1 General Read the instru ctions in this manual thoroug hl y before attempting to operate this equipment. This manual covers all confi gurations of models MH14 and BIMH14 fryers built since J uly 1999. Models designated MH14 do not have built-in filtration syste ms.
1-2 Fryers in this series are equipped with automatic safet y features: 1. Two high temperature detection features shut off pow er to the elements should the controlling thermostat fa il. 2. A safe ty switch built into the dr ain valve prevents the elements from heating with the drain valve even partiall y open.

2–1 CHAPTER 2: INST ALLA TION INSTRUCTIONS 2.1 General Proper install ation is essenti al for th e safe, effici ent, troub le-free operation of th is appl iance.
2–2 2.2 After Fr y ers Are Under The Fr y Stati on Hood Adjust casters so that fryers are level and at the prop er height in the fr y station hood. If necessar y , level the fry er(s) by loose ning the locking screw on the ca ster leg and screwing the ca ster in or out.
2–3 2.4 Frypot Boil-Out Before the fryer is first used for cooking product, it should be boiled out to ensure that any residue from the manufacturing process ha s been completely elim inated. Also, after the fryer has been in use for a per iod o f time, a hard f ilm of caram elized vegetable oil will form on the inside of the frypot.
3–1 CHAPTER 3: OPERATING FRYERS WITH M100B™ COOKING COMPUTERS 3.1 Equipment Setup and Shutdown Procedures Setup WARNING Fill the frypot to the bottom oil level line with vegetab le oil before pressing the ON/OFF switch to the ON position. Failure to do so could damage the frypot.

3–3 The fryer has two built-in high-limit protection features. If the te mperature in the frypot reaches approximately 410 ° F (210 ° C), the computer ope ns the heat relay circu it, turning the elem ents off. If the temperature in the frypot reaches 450 ° F (232 ° C), a mechanical high-lim it shuts off electrical power to the elements.
3–4 Operating the Computer on Split-Vat Fryers 1. Turn ON the cooking computer by pressing the ON/OFF switches . Pressing the left switch turns on the left side of the computer; pressing th e right switch turns on the right side. A product name (for example, FR FRIES ) will appear in the LED disp lay co rresponding to the switch pressed.
3–5 3. At the programmed shake time, an audible al arm will sound and th e display will flash SHAKE . After shaking the basket, pre ss the correspondi ng cook switch, 1 or 2 , to cancel the alarm. 0. After the completing the cooking time, an audi ble alarm will sound and the display will flas h pull .
3–6 Recovery Out of Range (REC LOC) Recovery time is an indication of the condition of the frye r. When the fryer is first turned on, the computer records the amount of time it takes to heat the cooking oil from 250 ° F (121 ° C) to 300 ° F (149 ° C).
3–7 3.5 M-100B™ Computer Set-Up and Programming Instructions The M-100B computer has three modes of operation. In addition to the Cooking Mode , which was discussed in Sections 3.
3–8 3. Release all 3 switches at the same tim e. M100B , then SETUP will appear briefly in the left display, then BOIL-OUT will appear in the left display and YES or NO will appear in the right display. How to Change the Com puter’s Display Language 1.
3–9 2. Press and release the switch until the word DISPLAY appears in th e left display. 3. Press the right 1 or 2 switch to toggle back and forth between constant product display ( CONSTANT ) or alternating temperat ure and product display ( ALT ).
3–10 3.5.2 M-100B™ Computer Programming Mode How to Enter the Program Mode 1. Press the ON/OFF switches until both displays of cooking computer indicate OFF . Press the left product selection switch and the left 1 and 2 cook switches simultaneously.
3–11 5. To change the times, use the following switches: Left Minutes (in increments of ten) Left 1 Minutes (in increments of one) Left 2 Seconds (in increments of ten) Right 1 Seconds (in increments of one) 6. Press the switch to lock in the new se ttings, and either ON/OFF switch to exit th e programming mode.
3–12 6. To EXIT and SAVE the product name entry, press the switch. SAVE will f lash in the right display, followed by YES or NO , indicating whether the menu ite m is active or not.
3–13 7. Press the switch to show the cooking tem p erature setpoint , displayed as SET-TEMP in the left display. The curre nt setpoint temper ature is in the rig ht display (for exam ple- 350F ). The temperature will be in Fahrenheit ( F ) or Celsius ( C ).
3–14 How to Display “Use Time” Information NOTE: This feature is used to determine the total amount of tim e that a fryer has been cooking. 1. Enter the program mode. See How to Enter the Program Mode on page 3-10. 2. Press the left switch to display use time for the lef t side of a dual-vat un it.

4-4 Note: You must agitate veg etable oil dur ing the entire high -limit control-c heck procedure with a maple paddle. CA UTION If after completing both high-limit tests y ou find only the second high-limit operates properly, t he vat can be used if it is absolutely necessary, but with extreme ca re.

5-2 8.1 STEP-BY -STEP FIL TRA TI ON INSTRUCTI ONS Switch computer to OFF. Slide the filter pan from the fry er cabinet. Open the filter- cover , and re move and clean the crumb tr ay.
5-3 Remove a nd cle an the hold-d own ring . Remove a nd di scard the dirty paper or pad. . Remove a nd clean the filt er screen. Make sure the inside of the pa n is free of al l food and br eading par ticles th at could prevent th e scree n from sealing agai nst the bottom o f the pan.
5-4 The filter pad is place d in the pan w ith the heavil y tex tured side facing up. When filter paper i s used, o ne sheet is placed ov er the screen and 8-ounces of fil ter powder is spread ev enly on the top o f the p aper. WARNING: Do Not Use Filter Pow der on Filter Pads Place p ad ev enly on filter screen.
5-5 Use 8-ou nces o f filter pow der and spread i t evenly over filter pap er. Remember , Do Not Use filter pow der on filter pads. Replace cru mb screen i nside the filter pan. It's imperative tha t the crumb screen is installed prior to f iltering, for optimum filter- system per formance.
5-6 Return h andle a nd drai n-v alv e handle location. W ith fry er o ff, open drain v alve. W hen fryp ot emp ties in to f ilter p an, turn return handl e to ON. Filter pump w ill activate. Turn the co mputer b ack ON and use rig ht arrow key to step through selec tion, stopping on FILTER.
5-7 The computer w ill countdow n the process, although it does n ot control the filtering . The oil moves thro ug h the filter , the fry pot and out the open frypot- drai n duri ng filter ing. Polishing is a ti med pr ocess th at cleans t he oil and w ashes small particles from the f rypot.
5-8 Close the dr ain-v alve and leav e the filter pump on to fill the frypo t . W ith the drain-valve closed, f rypot fills with oil. W hen the filter p an emp ties, bubb les will form in th e fry pot. Allow bubbl ing to c ontin ue 15-20 s econds t o ensure the oil return lines are clear of shorteni ng.
5-9 Turn the filter al ar m o ff by pressing . Top up o il le vel. Some oil may be lost in filtering pr ocess. Fill to first mark in frypot..
5-10 The oil may dr op bel ow oper ating temperat ure dur ing the filter ing pr ocess. In that case, the fry er will display Low-Temp and heat t he oil when it is turn ed on. Return fryer to o peratio n, or filter anot her frypot in the ba ttery. R emember , only one frypot can b e filtere d at a time.
5-11 d. To clea n the filte r base assembly , use a sponge or cloth soa ked with a water and grease- cutting solution. Be careful not to get water on the pump/motor assembly.
5-12 CA UTION Statement on discarding oil : Hot cooking-oil is dangerou s and will caus e severe burns. Handle with extreme caution. When disc arding old cooking oil , drain from the fry er into a Vegetable Oil Disposal Unit (MSDU50) - available f rom y our local distributor.

7-1 CHAPTER 7: SERVICE PROCEDURES Before performing an y maintenance on your Frymaster fryer, you must disconnect the electrical power suppl y . When electrical wires are disconne cted, it is recommended that the y be marked in such a way to facilitate re-assembly.
7-2 7-2: REPLA CE INTERF AC E BOARD 1. Unplug all power cords. Perform Procedur e 7-1, Steps 1-4, Replace Computer/Controller. 2. Unplug wire ha rness from the interface board. Remove all wiring from the terminals of the interfa ce bo ard, ensu ri ng th at each wire is marked f or reattac hment.
7-3 7-3: REPLA CE TRANSFORMER 1. Unplug all power cords. Perform Procedur e 7-1, Steps 1-4, Replace Computer/Controller. 2. Remove a ll wiring from the ter minals of the transformer to b e replaced. 3. Remove the scre ws that secu re the transformer to the component box.
7-4 7-4: REPLA CE TEMPERATURE PROBE (cont.) 6. Disconnect the wire harness containing the probe wiring. I t may be necessar y to remove the wire ties. 7. Use a pin-pusher to remove the probe wires from the connector. Mark ea ch wire for re- assembly. 8.
7-5 7-4: REPLA CE TEMPERATURE PROBE (cont.) 11. Place the new temperatu re probe assem bl y onto the element and secure with the screws removed earlier. Clip the probe onto the rear of the element . The temp erature prob e assembly should be oriented in the same manner as the probe being repla ced.
7-6 7-5: REPLA CE HE ATING ELE M ENT (cont.) 3. Remove the scre ws securing th e temperat ure probe bracket from the element. Remove the probe clamp (metal T y-Wrap). Set the temperature probe and probe-securing components aside. 4. Disconnect the el ement sprin gs.

Install the temperature probe and probe- securing components onto the replacement element. 7. Install the r eplacement el ement in the frypot and secure with the mounting screws removed in Step 5.
7-8 7-5: REPLA CE HE ATING ELE M ENT (cont.) 10. When replacin g the left el ement (as viewed from the rear of t he fr yer), use the 9-pin connector, inser ting the leads from the replacement element and cl osing th e connector, see previous step. 11.
7-9 7-6: REPLA CE HIGH-LIMIT 1. Perform Procedu re 7-4, R eplace Temperature Probe, Steps 1-4. 2. Disconnect the wire harness containing the high-limit wir es. 3. Use a pin-pusher to remove the two high- limit wires f rom the wire harness connector. For split-pot fry ers, remove only the wires for the high- limit to be repla ced.
7-10 7-7: REPLA CE FRYPOT 1. Perform Procedu re 7-4, Replace Temperature P robe, Steps 1-7. 2. Perform Procedu re 7-1, Replace Comput er/Controller, St eps 1-6. 3. Disconnect the wire harness conta ining the high-limit wire s. 4. Use a pin-pusher to remove the high -limit wires from the wire harness connector.

7-12 9. Remove the contactor mounting screws and remove the contactor. 10. Install the new contactor and connect the wiring removed in Step 8. 11. Install the contactor box b y following the previous steps in reverse order.
