Model OFG- 391 1-1. INTRODUCTION The Henny Penny open fryer is a basic unit of food processing equipment. This unit is used only in institutional and commercial food service operations. As of August 16, 2005, the W aste Electrical and Electronic Equip- ment directive went into effect for the European Union.

However , the only way to ensure a safe operation is to fully under stand the proper installation, operation, andmaintenance proce dures. The instructions in this manual have been prepared to aid you in learning the proper procedures.

Model OFG- 391 2-3. SELECTING THE FR YER The proper location of the fryer is very important for operation, LOCA TION speed, and convenience. Choose a location which provides easy loading and unloading without interfering with the final assembly of food orders.
Model OFG- 391 2-5. VENTILA TION OF FR YER The fryer should be located with provision for venting into adequate exhaust hood or ventilation system. This is essential to permit efficient removal of the flue gases and frying odors. Special precaution must be taken in designing an exhaust canopy to avoid interference with the operation of the fryer .

Model OFG- 391 2-8. GAS LEAK TEST Prior to turning the gas supply on, be sure the gas valve knob on the gas control valve is in the OFF position. The word “OFF” is at the bottom of the knob when the valve is closed. After the piping and fittings have been installed, check for gas leaks.

FILLING OR ADDING SHOR TENING The shortening level must always be above the heating elements when the fryer is heating and at the frypot level indicators on the r ear of the frypot (Figur e 3-3). Failur e to follow these instructions could r esult in a fir e and/or damage to the fryer .
Model OFG- 391 3-6. PRODUCT RACKING RECOMMENDA TIONS The rack positions are referenced starting at the bottom: 4 _____________ 3 _____________ 2 _____________ 1 _____________ The bottom position is to be avoided on small loads because it is closer to the cold zone.
Model OFG- 391 3-7. BASIC OPERA TION Follow the procedures below on the initial start-up of the fryer , and each time the fryer is brought from a cold, or shut down condition. 1 . Make sure the frypot is filled with shortening to the 2 lower level indicators DO NOT OVERLOAD, OR PLACE PRODUCT WITH EXTREME MOISTURE CONTENT INTO THE RACKS.

Turn the COOK/PUMP switch to the OFF position. ONL Y CONNECT AND DISCONNECT THE FIL TER RINSE HOSE WHEN THE MAIN POWER SWITCH IS IN THE OFF POSITION.

Model OFG- 391 3-12. FIL TER PUMP MOT OR The filter pump motor is equipped with a manual reset button, located on the rear of the motor , in case the motor overheats. W ait about 5 minutes before attempting to reset this protective device to allow motor to cool.

Open (Continued) the drain valve and drain the cleaning solution from the frypot into the filter drain pan and discard. 9 . Close the drain valve and refill the frypot with plain hot water to upper level indicator line.
