IMPORT ANT SAFETY INS TRUCTIONS 15 Do not insta ll kitchen cabinets above the r ange, since reaching over a hot stovet op to access the cabinets can result in burns. If it is necessary to install cabinets, you can r educe the risk of burns by installing a r ange hood that extends at least 4 3/4 in (12 cm) past the bottom of the cabinets.
IMPORT ANT SAFETY INS TRUCTIONS 16 Pr oper use T he oven becomes very hot while in use. Use caution to ensure that you ar e not burned on the heating elements or interior surfaces of the oven. Use pot holders when placing food in the oven, adjusting the r acks, etc.

T o prevent burns, allow the heating elements to cool befor e cleaning by hand. Do not leave the oven door open unnecessarily as someone may trip over it or be injured by it.
IMPORT ANT SAFETY INS TRUCTIONS 18 Use cautio n when using alcohol in your recipes. Alcohol evapor ates at high temper atures but may, in r are cir cumstances, combust on the hot heating elements. Plastic or alu minum foil cookware melts at high t emperatur es and can damage the r ange or start to burn.

Mak e certain that the power cords of small appliances do not come in contact with or get caught in the oven door . When baking fro zen pizzas or pies, place them on the wir e rack lined with parchment paper .
IMPORT ANT SAFETY INS TRUCTIONS 20 Do not all ow solid or liquid sugar , or pieces of plastic or aluminum foil to get ont o the burners when they are hot, as they can damage the cer amic surface when it cools down.

Remove spills and splatt ers promptly . Also make sur e that the bottom of any cookwar e is clean, dry, and free of gr ease before placing it on the cooktop.
IMPORT ANT SAFETY INS TRUCTIONS 22 If the cookware only partially covers the cooking or r oasting zone, the handle could become very hot. Make sur e to place the cookware in the middle of the cooking or roasting zone. The co oktop has burners of differ ent sizes.
IMPORT ANT SAFETY INS TRUCTIONS 23 Cleaning and care Do not use a st eam cleaner t o clean the range. The steam may r each electrical components and cause a short circuit. Only clean par ts listed in these Oper ating and Installation Instructions.
IMPORT ANT SAFETY INS TRUCTIONS 24 Accessories Use only ge nuine original Miele parts. If parts or accessories from other manufacturers ar e used, the warr anty will become void. Only use the Miele roast pr obe supplied with this oven. If it is faulty, it must only be replaced with a Miele genuine r oast probe.

Control panel 33 M T ouch display The touch scr een can be scratched by har d objects, e.g. pens and pencils. Only touch the display with your fingers. T ouching the display with your finger emits a small electrical charge, which in turn trigg ers an electrical pulse that is detected by the surface of the t ouch display .
Control panel 34 Symbols The following symbols may appear in the display: Symbol Description Some settings, e.g. display brightness and buzzer volume, ar e se lected using a bar chart. This symbol indicates that ther e is additional information and a dvice about using the oven.
F eatures 35 Model numbers A list of the ovens described in these oper ating instructions can be found on the back page. Data plate The data plate is behind the toe-kick. The t oe-kick cover is attached to the base of the range by magnets so it can be removed and put back again easily .
F eatures 36 Shelf runners The shelf runners are locat ed on the right and left-hand sides of the oven with the leve ls for inserting accessories. The shelf level numbers are indicat ed on the fr ont of the oven fr ame. Each level consists of a strut on which you can place the wire oven r ack, for example.
F eatures 37 FlexiClips with wir e rack HFCBBR30-2 The FlexiClips with wir e rack can be mou nted on any shelf level and pulled completely out of the oven This allows you to see the food easily . The FlexiClips with wir e rack is pushed in and then locked onto a level.
F eatures 38 P erforated baking tray HBBL71 The perforat ed baking tray has been specially d eveloped for the prepar ation of baked goods. The tiny perforations assist in br owning the underside of baked goods. The tray can also be used for dehydr ating or dr ying food.
F eatures 39 Gourmet Casserole Dishes HUB and Lids HBD Miele Gourmet Casser ole Dishes can be place d directly on the wir e oven rack. They have an anti-stick coating. The oven dishes have depths of 8 1/2" (22 cm) or 13 3/4" (35 cm). They have the same width and height.

The food browns evenly on all sides as it rotat es (see "Broil - Using the rotisserie to Br oil"). The rotisserie is placed on the universal tr ay and connected to the motors in the back wall of the oven.
F eatures 41 Cooktop safety features Safety shut-off The safety shut-off is triggered aut omatically if a burner is heated for an unusually long period of time. This time depends on the power level selected. If it has been e xceeded, the burner switches off and the residual heat indicator appears.
F eatures 42 System lock The system lock is deactivated if ther e is a power outage. The system lock can only be activated if all burners ar e turned off. The cooktop is equipped with a system lock to pr event the burners from being turned on inadvertently .

The system lock will r emain activated even aft er a power failur e. Safety shut-off The oven automatically turns itself off if it is used f or an ex ceedingly long period.
F eatures 44 P erfectClean treated surfaces The revolutionary P erfectClean enamel is a smooth , non-stick surface that cleans easily with a sponge. F ood and soiling from baking and r oasting can be easily r emoved from these surfaces. Do not use ceramic knives as these will scratch the P erfectClean surface.

Before using for the first time 47 T urning on the cooktop for the first time Remo ve any prot ective foil and stickers. Befo re first use, wipe down the appliance with a damp cloth and dry it. Metal components are pr otected by a conditioning agent.
Before using for the first time 48 Risk of injur y! Steam can cause scalding. Do not open the door during a steam burst. Heat up the oven for at least an hour . After at least one hour: T urn the oven off. After heating up for the first time Danger of burns! Allow the oven t o cool befor e cleaning.
Operating the cookt op 49 Induction How it works An induction coil is located under each b urner . When a burner is turned on, this coil creat es a magnetic field that impacts directly on the base of the pan and heats it up. The burner itself is heated up indir ectly by the heat given off by the pan.

Operating the cookt op 54 The burners are connect ed in pairs in or der t o provide sufficient power for the booster . The connected burner will oper ate at r educed power while the boost er is on. This has one of the following effects: – If the AutoBoost was pr eviously active, it will be switched off.
Operating the cookt op 55 T urning off T urn the knob to the left to 0. The power level in the display goes out. Residual heat indicators If the switched-off burner is still hot, the r esidual heat indicat or appears in the display . The bars of the residual heat indicator go out one after another as the burners cool off.
Operating the oven 56 Energy saving tips – Remove any accessories from the oven that you do not requir e for cooking. – T ry not to open the door when cooking. – If a temper ature r ange is given, it is best t o select the lower temper ature and check the food after the shortest cooking time given.

Settings 61 Language The desired country and language can be set. After selecting and confirming your choi ce, the language selected will appear in the display . Tip: If you accidentally select a language you do not understand, select the symb ol to r eturn to the submenu.
Settings 62 Date Set the date. When the oven is turned off, the date onl y appears if the oven is set to "Time – Clock T ype – Digital". Lighting – On The interior lighting is turned on during the enti re cooking period. – On for 15 seconds The oven lighting turns off 15 seconds aft er a pr ogram starts.
Settings 63 V olume Buzzer tones The volume is repr esented by a bar with seven segments. Maximum volume is selected when all segmen ts are filled. If none of the segments are filled, the volume is turned off. Select Quieter or Louder , to adjust the volume.
Settings 64 Cooling fan The cooling fan will continue to run for some ti me after the oven has been turned off to pr event humidity from building up in the oven, on the control panel or in the surrounding cabinetry . – Temperature Controlled The cooling fan turns off when the t emper ature in the oven dr ops below 160°F (70°C).
Settings 65 Self Clean – With reminder A reminder t o run the Self Progr am pr ogr am will appear in the display . – Without reminder Y ou will not be r eminded to run the Self Clean progr am. Safety System lock The system lock pr events the oven being t urned on inadvertently .
Settings 66 Sensor lock The sensor button lock pr events you fr om accidently turning the oven off or changing a cooking progr am. – On Before you can use a mode, t ouch for at least 6 seconds. – Off The buttons r espond immediately to a finger t ouch.
Settings 67 Electrical V er sion Setting the voltage (electrical version) Selec t the desired voltage and corresponding fr equency . Confirm with OK. Sensor group Y our oven was set at the factory t o aut omatically detect the wir eless roast probe supplied.
Settings 68 Showroom P rogram This mode enables the oven to be demonstr at ed in showrooms without heating up. It should not be set for domestic use. Demo Mode If you have demo mode activated Demo Mode is active. The appliance will not heat up will appear when you turn on the oven.
MyMiele 69 Y ou can personaliz e your oven using the MyMiele function by inputting fr equently used pr ocesses. It is particularly useful with Gourmet Cent er (oven) and MasterChef (speed oven) progr ams as you do not need to work through every scr een in order to start your progr am.
MyMiele 70 Editing MyMiele After selecting Edit you can – add entries as long as MyMiele contains fewer than 20 entries, – delete entries, – sort entries as long as MyMiele con tains more than 4 entries. Deleting entries Select MyMiele . Select Edit .
Alarm + T imer 71 Using "Timer", you can set an alarm for a specific time or set the timer dur ation to time an activity in the kitchen e.g. boiling eggs. T wo alarms can be set simultaneously, two timer dur ations or an alarm and a kitchen timer duration.
Alarm + T imer 72 Using the Timer The timer can be used to time any activity in the kitchen , e.g. boiling eggs. The timer can also be used at the same time as a cooking progr am if a start and finish time have been set, e.g. a reminder t o stir the dish or add seasoning.
Alarm + T imer 73 At the end of the timer – the Timer symbol flashes, – the time starts counting upwards, – A buzzer will sound if turned on (see "Settings - V olume - Buzzer t ones"). Select "Timer" or the timer in the upper right of the display .
Guide to the modes 74 The oven has a wide range of modes for pr eparing a variety of foods. Due to country-specific prefer ences for prepar ation of food, default temper atures and t emper ature r anges in °F and C° do not correspond. The temper ature values have been defined as given in the chart.

Additional functions 77 Y ou have placed the food in the oven, select ed a mode and set the temper ature. By selecting Additional Settings you can adjust cooking times and adjust additional settings. Select Change . Select Additional Settings .
Additional functions 78 Rapid Pr eHeat Rapid Pr eHeat can be used to speed up the pr eheating phase. The Rapid heat-up function switches on aut omatically if you set a temper ature of more than 212°F (100°C) for Convection Bake / Convection Roast , Auto Roast , Surr ound Roast / Surround and Moistur e Plus .
Additional functions 79 Using the Crisp function (M oisture Reduction) It is a good idea to use this function w hen cooking items which ar e moist on the inside but which should be crispy on the outside, e.g. french fries. It is also suitable for fruit cakes, such as apple cak e.
Additional functions 80 Setting additional durations Y ou have placed the food in the oven, select ed a mode and set the temper ature. By entering Duration , Ready at or Start at you can aut omatically turn the cooking progr am on or off. – Duration Enter the cooking dur ation requir ed.
Additional functions 81 T urning off automatically It is now 11:45. The food takes 30 minu tes to cook and should be r eady at 12:15. Select Duration and set 00:30 h or select Ready at and set the time for 12:15. The oven will turn off automatically after this dur ation has elapsed or the time set has been reached.
Additional functions 82 Sequence of a cooking program that turns on and off automatically Up until the start time the mode, the select ed temper ature, Start at and the start time will appear in the display . After the progr am has started you can foll ow the preheating phase in the display until the requir ed temper ature has been reached.
Moisture Plus 83 Y our oven is equipped with a steam inje ction system for cooking with moisture. Baking, r oasting and cooking with Moisture Plus guar antees optimized st eam and air conduction for ex cellent cooking and browning results.
Moisture Plus 84 Cooking with the Moisture Plus function It is normal for condensation to form on the inside of the door during steam injection. This will dissipate during the course of the cooking progr am. P r epare the food and place in the oven if no preheating is r equired.
Moisture Plus 85 Changing the type of heating All four modes (Convection Bake, Surr ound, Int ensive and Auto Roast) are available to use with Moistur e Plus , however Convection Bake is set as the default mode. Select Change . Select Additional Settings .
Moisture Plus 86 Injecting bursts of steam Steam can cause scalding. Do not open the door during bursts of st eam. Also, condensation on the sensors will cause then to have a slow reaction time. Automatic burst of steam Automatic burst of steam appears in the display .
Moisture Plus 87 Evapor ating residual moisture When cooking using the addition of moistu re, the wat er will be equally distributed between the number of bursts of steam and used up as long as the progr am is not interrupted.
Moisture Plus 88 Starting residual moisture evapor ation immediately Steam can cause scalding. Do not open the door . Selec t the Moisture Plus function or a MasterChef Plus pr ogram. Evaporate Residual Moisture? appears. Select Yes . Evaporate Residual Moisture and the timer se ttings appear .
Gourmet Center 89 Y our oven has a wide r ange of Mast erChef, and MasterChef Plus progr ams that enable you to achieve ex cellent cooking results with ease. Simply select the appropriat e progr am for the type of food you are cooking and follow the instructions in the display .
Gourmet Center 90 Using the MasterChef and Mas terChef Plus progr ams F rom the main menu: Select Gourmet Center . Select MasterChef or MasterChef Plus . A list of food types will appear in the display . Selec t the food category (for MasterChef Plus, only one category is available).
Gourmet Center 91 Search Y ou can sear ch Gourmet Center by food type and by the name of the progr am. There is a full t ext search which can also be used t o sear ch for parts of words. F rom the main menu: Select Gourmet Center . A list of food types will appear in the display .
F avorites 92 Y ou can cr eate and save up to 20 of your own pr ogr ams. – Each one can have up to 10 cooking stage s. This enables you to save your most frequently used r ecipes very accurat ely . Each stage contains a mode, temper ature and dur ation or core t emperatur e.
F avorites 93 Y ou can add a line br eak for longer pr ogr am names using the symbol. Once you ha ve enter ed the progr am name select Save . A message will appear in the display confirming that the name has been saved. Confirm with OK. Y ou can start the saved progr am immediat ely, delay the start or change the cooking stages.
F avorites 94 – Display Stages A summary of your settings will appear in this display . Y ou can adjust the setting under Change (see "Changing F avorites"). Selec t the desired menu it em. Co nfirm the message regar ding which shelf level to use with OK.
F avorites 95 Changing the name Select Favorites . The progr am names will appear in the display . Select Edit . Select Change Program . Selec t the desired pr ogram. Select Change name . Cha nge the name (see "Creating a F avorite") and select Save .
Bake 96 Eating food which has been cooked correctly is important for good health. Only bake cakes, pizza, fr ench fries, etc. until they are golden br own. Do not overcook them. Oven modes Depending on how you would like the fo od prepar ed, you can use Convection Bake , Intensive , Moistur e Plus or Surround .
Bake 97 T emperature As a general rule, select the lower t emper ature given in the chart. Choosing a baking temper ature higher than tho se recommended may r educe the cooking time, but will lead to uneven browning, and unsatisfact ory cooking results.
Roast 98 Always follow USDA guidelines on food safety . Oven modes Depending on how you would like the food cooked, you can use Convection Bake / Convection Roast , Moisture Plus , Auto Roast , Surr ound / Surround Roast or a Mast erChef progr am.
Roast 99 Wireless Roast Probe The wireless r oast probe enables the roasting pr ocess to be monitor ed simply and reliably . It can be cleaned in the dishwasher .
Roast 100 When to use the wireless roast pr obe Apart from Mast erChef programs, Special Mo des and F avorites, the wireless r oast probe can be used with the following functions: – Auto Roast .
Roast 101 In addition please note: – The meat can be placed in a pot or on the rack in the universal tr ay. – The metal tip of the wireless r oast pr obe must be fully insert ed into the center of the food. The handle should be angled upwards t owards the corners or the door of the oven.
Roast 102 Using the wireless roast probe Remo ve the wireless r oast probe from its holder in the door . Inser t the metal tip of the wireless roast pr obe fully into the food. Make sure that the handle is angled upwards. Place the food in the oven.
Roast 103 Time left display After a certain time, the estimated dur ation of the cooking pr ocess remaining (time left) will appear in the display . The time left is calculated fr om the coo king temper ature selected, the requir ed core temper ature and the pattern of the incr easing core temper ature.
Roast 104 Using residual heat Shortly before the end of the cooking pr ogr am the oven heating will turn off. The residual heat in the oven is sufficient to complete the cooking process. Using the residual heat in the oven saves ener gy . Energy Save Phase will appear in the display t o show that the oven is in energy save mode.
Slow Roasting 105 This cooking method is ideal for cooking beef, pork, veal or lamb when a t ender r esult is desired. First, using a cooktop sear the meat on all sides t o seal in the juices. Then place the meat in a preheat ed oven. It will be cooked at a low temper ature for an e xtended time allowing the meat to become very tender .
Slow Roasting 106 Using the Slow Roasting function Select Special Modes . Select Slow Roasting . Set the r equir ed temper ature. Set the cor e t emperatur e. F ollow the instructions in the display. Let the wir e oven rack and universal tray pr eheat in the oven.
Slow Roasting 107 Adjusting the Slow Roasting t emperatur e Use the wire oven r ack with the uni versal tray on t op. Do not use the Rapid Pr eHeat function to pr eheat the oven. Pl ace the rack with the universal tr ay on shelf level 3. Select Operating Modes .
Broil 108 Danger of burns! Br oil with the oven door closed. If you broil with the door open the hot air will escape from the oven befor e it has been cooled by the cooling fan. The controls will get hot. Oven modes Maxi Broil This mode gives ex cellent browning an d searing results.
