2 • Condition the Non-Stick Int erior Surfac e The non-stick surf ace must be condition ed to ensure stick-free cooking . Lightly wipe a teaspoon of cook ing oil with paper tow e ling or soft cloth over the entire surface. The skillet is no w ready to use.
3 5. If the skillet rocks w hen place on a flat surface, remove screw on the leg which is not rest ing on the surface. Install one of t he enclosed washers between the skillet mounting projection and the h andle. Replace the screw following the instru ctions 3 and 4 above.
4 CAUTION: To prevent person al injury or propert y damage, han dle the heat control caref ully if you rem ove it from the produ ct immediately after cooking because the metal pro be will be hot—do not touch the metal prob e or let it touch anything or any surface that may burn.
5 • Dishwa sher Cleaning The skillet (with heat control removed), cover and rack may be cleaned in automatic dishwasher. Ho wever, th e underside of the skillet and the in side of the cover (n on-coated aluminum surfaces) wi ll darken.
6 POULTR Y 1. Place unstuffed roasting onto rack in the skillet. B aste with melted butter or margarine and season as desired. Using se as oned salt will help to b rown a ny po ultr y. 2. Insert m eat thermometer t ip into thick part of thigh making su re the tip does n ot touch a bone.
7 Break fast Br ighteners SCRAMBLED EGGS Break eggs in to a bowl with 1-tablespoon wa ter, milk or cream for each egg; add salt and pepper. Blend thoro ughly. P reheat s killet to 250° uncovered. Melt butter or m argarine (1 tablespoon for 2 eggs). Pou r in egg mi xture.
8 2. Preheat skillet, uncovered at 350°. Pour s cant ¼ cup batter onto skillet for each pancake and bake until bubbles break and edges are cooked. Turn and bake on t he other side, about 1 minute per s ide. Serve imm ediately. Makes 20 to 24 pan cakes.
9 MAIN DISHES CHICKEN WITH RICE 3 – 3 ½ pounds f rying chicken, cut into serving pieces ¼ cup but ter or margarin e 1 ½ cups instant rice 1 10 ½ -oun ce can condensed cream of chick en soup 1 cup w ater 1 teaspoon ins tant chicken flavored bouillon crys tals or 1 chicken bouillon cube 1.
10 2. Preheat skillet, uncovered, at 375°. Melt sh ortening. Brown steak for 5 m inutes per side. 3. Combine vegetables and water. Pour over steak. Cover, reduce heat to SIMMER and simmer until tender 1 to 1 ½ hours. Reduce h eat to W ARM fo r ser ving.
11 ¼ teaspoon h ot pepper sauce 16 taco shells shredded lettuce 1. Melt butter or marg arine in skillet, uncovered, at 250° A dd o nion and celery; sauté until crisp . 2. Reduce heat to SIMMER. Add bro wn ed ground beef, tomatoes, tomato pa ste, salt, sugar, chili powder and hot pepp er sauce.

13 2. Place rack in sk illet. Replace roast on rack. Season as desired. Insert meat thermometer into th ickest part of the roast. 3. Cover an d roast at 225° until desired donen ess is reached, about 1½ hours for rare (140°), 2 hours medium (160°) or 2 ½ hou rs f or well done (170°).
14 EASY SKILLET D INNER 2 cups diagon ally sliced celery 1 tablespoon chopped onion 2 tablespoon s butter or m argarine 2 ½ cups wa ter ¾ teaspoon salt ½ teaspoon basil ¼ teaspoon oregano 1 cup raw rice 1 1-poun d can tomatoes, reserv e liquid 2 6 ½-oun ce cants tuna, drain ed, or 5 –ounce cans boned chicken or tu rkey 1.
15 1. In skillet, combine bro wn su gar, corn syrup, better or margarine and salt. 2. Bring mixture to a boil at 250°. Stir until butter melts a nd sugar dissolves. 3. Add sw eet potatoes, bast e with sy rup. Reduce heat to SIMMER. Cook f or 15 minutes.
