FREEZING & STORING FROZEN FOODS The freezer section IS designed for storage of com- mercially frozen foods and for freezing foods at home. Packaglng-The secret of successful freezing IS in the packaging. The wrap you use must be air. moisture and vapor proof.
12 --- Freezing Vegetabies - Freeze only fresh high- quality vegetables picked when barely mature. For best results, freeze no more than 2 to 3 hours after picking. Wash in cold water, sort and cut into appropriate srzes. Blanch or scald. Pack in recom- mended container and freeze.
IMPORTANT: Do not expect your freezer to quick-freeze any large quantity of food. Put no more un- frozen food into the freezer than will freeze within 24 hours. (No more than 2 to 3 pounds of fresh meat or 3 to 4 pounds of vegetables per cubic foot of freezer space.
