3 I. INSTRUCTION FOR T HE INSTAL LER Congratulations! You have just purchased a new Cadco LineChef TM Digital Convection Oven. Let’s go over some of the basics before you start using your new oven.
4 4. INSTALLATION 4.1 ELECTRICAL CONNECTION • Connection to the electrical power so u rce must be done accordin g to all state and local codes. Before connecting your oven, make sure that the voltage and the amps com pl y w ith those stated on the data plate of your oven.
5 Use your Cadco oven for: ♦ Baking all types of bread and pastr y, both fresh and frozen. ♦ Cooking any meat, fish, or fowl. ♦ Rethermalizing any cooled or frozen cook ed foods. ♦ Cooking (not steaming) any kinds of vegetables. • Please avoid salting your food products while the y are inside the cooking cavit y.
6 ♦ Press the key when time is set at “ 0 ”, and “ INF ” will appear in the displa y window. The oven will then work continuously until you stop it by pressing the START / STOP key .
7 • AUTOMATIC PRE-H EATING ♦ When y ou activate a memorized prog ram with the START/STOP key, the oven will automa tically preheat the cooking cavit y and you will see no numb ers in the display window, just the letters “ PR E .” ♦ Pre-he ating tempera ture is equal to the set temperature plus approximately 20%.
8 when the operator pushes the START / STOP key, if no other ke ys are pressed, the control panel automatically switches off. The displa y, control pa nel lig hts, and light inside the cooking chamber will all be off, e xcept for the red START / STOP lig ht.
9 the oven is operating in the manua l mode. To view the differ ent parame ters, simply press the SELECT key to advance the light to the icon/operation you wish to review (Time, Temperature, Humidity). ♦ If you sele ct “Time”, the display shows the re maining time for that step.
10 automatically begin the new cook c ycle. ♦ At the end of th e 45 se conds, or if th e cookin g c ycle is interrupte d b y pressing the S TART / STOP key, all the parameters previously set will be set to 0 and the START/STOP LED will be switched off.
11 and quickly. Foods cook fa ster with convection. • CONVECTION & HUMIDITY (Humidit y models) ♦ Adding measured amounts of humidity while baking helps many products retain moisture. In some cases, such as with Pate Choux , the product will gain in volume.
12 • Screw the glass cover b ack on. • Reassemble the side rails. 2.2 REPLACEMENT OF THE F USE To replace the fus e: • Press on the cover of the fuse holder an d ro tate it of about 20° counterclockwise. • Remove the cover of the fuse holder.

14 V. OPTIONAL DIGI TAL CONVECTION OVENS ACCESSORIES • XAL195 Full Size Proofer ♦ Must be used with a full size LineChef TM Digital Oven with Dynamic control panel (oven models: XAF-188 and XAF-195) ♦ Oven and proofer are bot h set using the LineChef TM Digital Oven Dyna mic control panel.
15 VI. COOKING GUIDE The first and most important step will be: Have your new oven hook ed up to the proper power and (i f applicable) water source. If there is an y doubt about the proper power or th e connections, have the ov en installed b y a qualified el ectrician accordin g to your local codes.
16 Cookies Baking Tem perature One of the most common items baked in your Cadco C onvection Oven will be cookies. There are do zens of cookie manufacturers, an d their products all have different b aking character istics. Most of the cookie recipes suggest a baking temperature of 325º - 350º F.
17 • Muffi ns ♦ 15 minutes at 325ºF/ 20% humidity works well for most standard size muffins. ♦ For jumbo muffins set the oven temp at 300ºF/ 20% humidity and bake the muffins for 20 minutes or until a toothpick comes out c l ean. ♦ The more dense your batter is the l onger your muffins w ill take to bake.
18 • “Oven F ried” Chicken Let’s say that you want to serve fried chick en in your food service operation but you don't want all of the problems associated with a chicken pro gram.
19 • Rare Roast Beef ♦ Rare beef is considered b y most people to be 130ºF. ♦ The USDA states that full muscle beef when roast ed to an internal temperat ure of 130ºF and maintained at that temperature for 121 minutes is considered saf e to eat.
20 VII. WARRANTY • Cadco, Ltd. warrants all products (in the United States and Canad a) to be free from defects in mater ial and workmanship for a p eriod of one year from da te of purch ase, unless otherwise noted b elow.
